Tips & Tricks To Success
Chocolate bars may seem easy enough, but it’s the easy stuff that has the most little details to pay attention to. With bars, it’s the fluidity of the chocolate, working temperature of the chocolate, mould temperature and how & when to add your flavours and textures. We’ll go through all the essentials in class to set you up for success.
Tempering
One major component of working with chocolate is knowing how to temper and choosing a good tempering method. One that gives consistent results and is easy for you to do.
Working Temperatures
Depending on the type of chocolate work you’re doing, your working temperature will vary in order to give you the most working time and best chance of success. Bars and barks require different working times and temps than shelling, for example. Once you know how to set yourself up well, you’ll find making bars much easier and you’ll get much better results.
Three Different Bar Designs
In this class I’ll show you three different finishing techniques for making your bars, as seen in the images on this class page. You can use any shade of chocolate and many different types of inclusions. Your class book will give you ideas for inclusions, flavours, spices, and some examples of good flavour combinations to try.
