Flavour Pairing
This is the ultimate flavour pairing; sweet, savoury, salty and caramel. It hits all the taste sensations on the palate. There are even more flavours you could use in this pairing and we’ll discuss that a little bit in class.
Maple Caramel
This is my signature caramel recipe and one that I use in a lot of applications throughout my work now. It’s got a lovely, pure maple flavour and a great shelf life – minimum of 4 months. The flavour pairs incredibly well with the salty, crunchy popcorn praline.
Crunchy Corn Praline
I’ve been wanting to test this for a long time, and I am so glad I finally did. This is a home-run! The reaction from taste testers has been a resounding ‘Wow!’ It’s light and somewhat airy from the corn which results in an overall ‘lighter feeling’ bonbon.
Bonbon Design
The swirl design on this bonbon is done with blue, yellow and white coloured cocoa butters. It’s done using a small round brush and we’ll cover all the details during class. And, of course, we’ll go through the shelling and capping for optimal shelf life.
