Do you enjoy being in the kitchen? Want to learn a new craft?
Chocolate making is the best of both worlds.

Spend a day learning how to make beautiful, hand-painted chocolates known as ‘Bonbons’ using
all natural ingredients and artisan chocolates that are made in house.

Relax into the guidance of a professional chocolatier while learning

This is a fully hands on class for enthusiastic home cooks and professional chefs alike. Learn all aspects of chocolate making in a laid back atmosphere with like minded people.

What you’ll learn and make on the day –

Hand-painted Bonbons

Painting is a significant aspect of this bonbon masterclass. You will colour 2 different moulds using a collection of techniques and colours. We’ll be using naturally coloured cocoa butters  in this class to create gorgeous, shiny chocolate shells. Each student will design their own bonbons and take these home with them.

Fillings

In class I’ll show you how to make an array of fillings using all natural ingredients and no refined sugars. Each class is different, but you can expect to be making a caramel, praline and ganache to layer in your bonbon shells.

Flavour Pairing

One of the most popular topics people want to explore with me is flavour pairing and how to combine flavours that are a little different. So, we’ll spend some time discussing my process of flavour pairing and developing new recipes. We can also spend time discussing your ideas, recipes you’d like to create and how to go about doing so.

Cleaning & Polishing Moulds

Part of getting shiny chocolates is a clean mould. So, I’ll show you how to clean and polish the moulds to get the best results.

Shelling & Capping

The chocolate shell and cap are very important parts of the bonbons. They are what hold the fillings and prevent oxygen getting inside – stops them from going off fast. Students seem to really enjoy both of these steps in the process.

Take What You Make

After spending the day making your beautiful chocolates, you will pack them up to take home with you and share (or not 🙂 ) with your friends and family. You can expect to take home between 35-50 bonbons.
