Learn how to start with an air brush
This class is an introduction to using an airbrushing in chocolate design. It’s recommended that you have
experience working with chocolate before attending this class. Unless you’re just curious 🙂
Technical skills that lead to creative expression
This class is all about getting started with using an airbrush. Using an airbrush to design chocolates is indeed an art in and of itself.
You’re using a piece of kit that was originally designed for art applications, spraying cars, etc.. So it’s important to get some guidance on which gun and compressor to buy, what the two pieces of kit do and how to make them work for you.
You don’t need to already own an airbrush in order to take this course. I will tell you which gun and compressor I use and you can buy those or follow the specs provided in class and choose your own.
We’ll be using pre-made naturally coloured cocoa butters (not raw) and stone ground chocolates in this class to create gorgeous chocolate shells. No recipes for chocolate or fillings will be provided in this class. It’s strictly about using an airbrush.

Anatomy of an Airbrush
It’s important to understand the tools you’re working with. That way, you know what to look for when you want to buy one and what to do if something isn’s working the way you want it to. We’ll go through all the details.
Compressor
The compressor is an integral part of using an airbrush. It’s important to know what it does and the specs to look for when choosing one.
Achieving a Mirror Shine
This step is all about tempering, storage practices and time. Both the colours being applied to the mould and the chocolate shell contribute to the final product being super shiny.
Caring For Your Airbrush
The better you take care of your tools, the better they take care of you. The airbrush doesn’t need to be cleaned with hot soapy water after every use, so we’ll cover when and how to clean it, but also how to ensure it remains in optimal working condition in the interim stages.
Working Conditions
Working with chocolate is all about creating the perfect conditions in order to be successful. Room temperature, relative humidity and working temperatures are all hugely important aspects and where using an airbrush is concerned there are a few more treats to throw into the mix. We’ll cover all of that in class.

- Using the airbrush as a blowing instrument to achieve complex layering
- Learning spray control for a consistent finish
- Using the airbrush to achieve a splatter effect
